Fresh-off-the-boat oysters on the half shell used to be hard to find outside of a restaurant. But fourth-generation oystering company Copps Island Oyster Shack at Brownโs Marina in Stratford, CT, makes it possible for us to have direct access to locally and sustainably harvested shellfish without harming the Long Island Sound. โWe wanted our customers to have a direct-to-consumer experience and offer the freshest, locally and sustainably cultivated shellfish,โ says Jimmy Bloom, who now runs the family business with his sister Jeanne. (The companyโs mobile Shuck Truck is available for private events.)

Their traditional oystering methods have not only preserved the oyster population on the sound but also improved it in the last 150 years. Look for their new Oystermanโs Daughter retail store coming to Brownโs Marina, and a second Oyster Shack location in Branford, CT, this year.
