Paletas de Fresas

In In Edithโ€™s Kitchen, Edithโ€™s Paletas de Fresas capture the bright, fresh flavor of ripe strawberries in a refreshing, icy treat. These homemade popsicles balance natural sweetness with a hint of citrus, making them perfect for warm days.

Ingredients

  • 2 pounds strawberries, hulled or frozen
  • 1 cup granulated sugar
  • 1ยฝ tablespoons fresh lime juice

Instructions

Serves 12

  1. In a blender, combine the strawberries, sugar, lime juice, and 2 cups water and blend on high until smooth and creamy, 1 to 2 minutes. Evenly divide the mixture among twelve ice pop molds. Place the molds in the freezer for 30 minutes to firm up. Remove from the freezer, place an ice pop stick in the center of each mold, and return them to the freezer for at least 4 hours or until fully frozen.
  2. Dip the molds into warm water for 5 seconds or as long as needed to loosen the ice pops from the molds. Unmold and serve immediately.
